Preserving in salt is an old time method of preservation. We often think of using salt in the context of the pioneers and people that do not have refrigeration or freezers. It was the only way they had of preserving and curing meat.
Let me tell you – it’s still a fresh method of food preservation to use today.
Recently I’ve been experimenting with new ways to preserve a bumper crop of basil, and came upon this salting method. It’s super easy, relatively inexpensive, and provides you with months of fresh herbs and flavored salt. I thought it was time to do a bit more research about this old time method of preserving herbs.
