10 Kitchen Tips from the 1954 Girl Scout Handbook:
Cooking is both a science and an art. It can also be a creative experience. Everyone likes a good cook! Wherever you go and whatever you do, you will always be making a home for yourself, your family, and friends.
- A piece of waxed paper may be used to line a baking pan instead of greasing the pan.
- Pour cereals (like oats) slowly into salted, boiling water. Keep the water boiling to prevent lumps.
- When you dice apples for a salad, leave on the peelings, They add color.
- To cut butter into smooth squares, dip your knife into hot water before cutting each square or put wax paper over the knife.
- Pour boiling water over tomatoes to make the skin slip off easily.
- Use a paper bag to flour or meal chicken or fish. Mix the flour with salt and pepper in a bag and then add the chicken or fish. Close the top of the bag and shake gently.
- Use flour, cornstarch, eggs, rice water or potato water to thicken sauces or gravies.
- Rinse egg dishes or milk dishes in cold water before washing. Rinse sugar dishes in hot water.
- Cut onions under cold running water to prevent tears from coming to your eyes.
- Wash your utensils as you go so that no large pile is waiting fro you at the end. Use as few utensils as possible.
